Orzo, also known as Risoni or Riso, is a small, rice-shaped pastina (little pasta) that can be used for soups, salads, and as a risotto substitute called "orzotto". This tiny pasta absorbs flavors well and can be cooked quickly, often used in Mediterranean, Greek, and Italian dishes. These are bronze-cut and made with a semolina-and-water dough. This is a large orzo, close in size to orzos more usually found in US stores.
