All pasta is made in small batches using imported Italian durum wheat flour. It's extruded using bronze dies to give it sauce-holding texture and dried slowly over days to bring out the best flavor. Pick ups are Friday, Saturday, or Sunday at Parker+Scott in Crestview (2113 W. Anderson Ln). Contact me for special orders. A simple scratch made sauce with DOP San Marzano tomatoes, garlic, olive oil and a little basil with a slightly chunky texture. Great simply topped with Pecorino or Parmesan or as a base for a slow cooked meat sauce or to add your favorite veggies.

Orzo, also known as Risoni or Riso, is a small, rice-shaped pastina (little pasta) that can be used for soups, salads, and as a risotto substitute called "orzotto". This tiny pasta absorbs flavors well and can be cooked quickly, often used in Mediterranean, Greek, and Italian dishes. These are bronze-cut and made with a semolina-and-water dough. This is a large orzo, close in size to orzos more usually found in US stores.

A fun pasta shape that resembles tiny mushrooms. Also called Trotolle and Vesuvio. Likely originating in Southern Italy, though many regions made pasta shapes resembling and inspired by elements of the surrounding landscape. It’s excellent with creamy sauces, fresh herbs, or sautéed veggies, and of course, mushroom sauces. It brings a fun, earthy vibe to any dish. These are bronze cut and made with a semolina dough.

A short bronze-drawn ribbon pasta with wavy edges also known as Mafalda Corta. This is a shorter cut version of Mafaldine that was named in honor of Princess Mafalda of Savoy who was known for her long wavy hair. The frilly edges hold onto sauce beautifully, making it perfect for hearty ragùs, seafood sauces, or a classic Napoletana (tomato and ricotta).
