Question 1

What makes Colibri Pasta special?

Accepted Answer

My pasta is bronze-drawn and slow-dried, made in small batches in Austin. It's shaped through bronze dies, which gives it a rough, porous surface that holds sauce beautifully, then air-dried and cured over 4-5 days instead of rushed with high heat. That combination means more flavor, better texture, and (for a lot of people) easier digestion than mass-produced pasta. It’s also made with 100% Italian durum wheat flour (Semolina) which is non-GMO, processed without glyphosate, and contains no synthetic additives (like folic acid, niacin, thiamine mononitrate, and riboflavin) bleaching agents, or flour conditioners like potassium bromate. Just the wheat and fresh filtered water.

Question 2

What is bronze-drawn pasta?

Accepted Answer

Bronze-drawn, or bronze-cut, pasta is shaped using an extruder fitted with specially crafted bronze dies. As the dough is pushed through, the bronze creates a naturally rough, porous surface that clings beautifully to sauces. This traditional method also gives the pasta a slightly matte finish and more rustic character. Very different from the smooth, slippery texture of pasta made with Teflon-coated dies in most commercial production.

Question 3

Accepted Answer

Question 4

How much pasta should I get per person?

Accepted Answer

A serving size of dried pasta is about 2oz per person before cooking. A 1/2lb package is 3-4 servings, 1lb is 6-8 servings.

Question 5

How do I cook my pasta?

Accepted Answer

Start with well salted water. Cooking times vary a little depending on the shape. Recommended times are listed on the label. If you're finishing the pasta in a sauce or baking, cook it a little less than al dente so it finishes cooking in the sauce. Perfectly cooked pasta should have a little bite to it and not be mushy.

Always cook in gently boiling water to avoid breakage.

Question 6

Do you do special orders?

Accepted Answer

Yes! I love to do special orders. If you’re looking for fresh egg pasta, bulk orders of dried pasta, gift bags for events. Send me an email.
