My pasta is made in small batches, shaped using bronze dies made in Italy, and slow dried using traditional methods. Only two ingredients - 100% Italian high-protein durum wheat flour and water. Weekly pick ups are at Parker+Scott in Crestview (2113 W. Anderson Ln).

"Little thimbles", a small, short tube shape from Southern Italy, perfectly sized for soups, pasta e fagioli, thick vegetable stews, and pasta salads. The hollow center fills with broth and sauce in every bite. Bronze-die extruded for a rough, porous surface that holds onto whatever it's cooked in.

Orzo, also known as Risoni or Riso, is a small, rice-shaped pastina (little pasta) that can be used for soups, salads, and as a risotto substitute called "orzotto". This tiny pasta absorbs flavors well and can be cooked quickly, often used in Mediterranean, Greek, and Italian dishes. These are bronze-cut and made with a semolina-and-water dough. This is a large orzo, close in size to orzos more usually found in US stores.

A short chunky pasta shape resembling old-fashioned steam radiators. One of the few modern pasta shapes, created in the 1960s and rumored to have been modeled on a Bugatti's radiator grill. These are bronze-cut and made with a semolina and water dough.

The kit includes one 8oz package of slow-dried orzo and 1/2oz dried porcini mushrooms sourced from a small, family-run shop in Spoleto, Italy. Add a shallot, garlic, parmesan, and a little white wine (if you like) and you'll have an easy and delicious one-pot meal or side dish. Makes 4 servings as a main dish and more as a side.

Square-shaped long pasta originating from Abruzzo. Traditionally cut with a chitarra, a wooden frame with strings, which gives it a unique shape. The bronze die gives it a texture that clings to meaty ragus and simple marinara. It's a fun upgrade to traditional spaghetti. These are bronze-cut and made with a semolina and water dough.
Pasta is delivered fresh and will keep refrigerated for up to 2 days. It can be frozen for longer storage.

A short, twisted S-shaped pasta from Sicily, bronze-die extruded to hold its signature curl. The shape creates a dense, slightly chewy bite and plenty of surface for sauce to grab onto. Traditionally paired with basil or Sicilian tomato pesto, but equally good with anything chunky or herby.
