Zucchini Orzotto
For all the zucchini lovers! This is a dish packed with so much delicious zucchini flavor that comes together quickly and is great as a main dish with your favorite protein, chicken or salmon are especially good with it.
Ingredients:
8oz Orzo
2 tbsp ricotta
½ lemon, juiced
shredded parmesan
2 medium zucchini, shredded or diced
1 tbsp butter
2-3 cloves garlic
2 cups chicken or veggie stock
Heat a large skillet over medium heat, add butter and a drizzle of olive oil. Once the butter is melted, add orzo and toast for 2-3 minutes. Add minced garlic and cook until fragrant.
Add your stock a ladleful at a time, stirring and letting each addition absorb before adding the next, just like a risotto. Halfway through, stir in the zucchini and keep going until the orzo is just cooked through and the liquid is absorbed.
Remove from heat and add the ricotta, stirring to emulsify and create a creamy sauce. Add salt to taste, then top with fresh black pepper, lemon juice and zest, and parmesan.
