Semolina pastas are made with a traditional Southern Italian-style dough of ultra-fine-milled durum wheat semolina flour and water. This simple, two-ingredient, naturally vegan dough results in hearty, firm pasta with a distinct nutty flavor. All semolina pastas are extruded with bronze dies, except for Cavatelli, which is made with a hand-cranked machine.
